They are traditional Sicilian cookies and I found the recipe in my book ‘Profumi e sapori della cucina siciliana’.
- 500g blanched almonds
- 350g sugar
- 2 eggs
- the zest of 1 lemon
In a food processor fitted with a metal blade, add the blanched almonds and the sugar and process until the almonds and sugar are a fine powder,add the other ingredients and mix to obtain a smooth mixture.
Pipe the mixture on the baking paper with an open star tip. Decorate with candied cherry, or candied fruits..
Or shape small balls, roll them in icing sugar and top with an almond (see last picture), coffee bean…
Cook for 8-10 minutes at 180°C, until golden brown.
