The first time I heard about Tiger bread I was dead-set on making it. They look awesome, isn’t it?
Here they are:
- 500 g flour
- 2 Tbs honey
- 20 g fresh yeast (or 7 g dry yeast)
- 1 cup water
- 2 Tbs butter
- 2 tsp salt
Combine all the above ingredients to make a smooth dough. Cover and allow to proof, until double the volume, about 1-1/2 hour.
- 3/4 cup rice flour
- 3 Tbs dried yeast
- 3 tsp sugar
- 2 tsp sesame oil/olive oil
- 160 ml spring water
Mix all the above.
Shape the dough in 2 loafs or 6 balls.
Top with a thick layer of topping, allow to proof until double the volume, about 40 minutes.
Bake the bread 30 minutes at 200°C, or until golden brown.
The rice paste crust gives the bread a distinctive flavour. It has a crusty exterior, but is soft inside.
