I saw this cake yesterday, at my dear friend Any and I couldn’t resist.
I gladly recommend it.
For a 20 cm diameter round pan, we need:
- 180 g Callebault chocolate 70%
- 150g butter
- 160 g icing sugar, sifted
- 1 espresso coffee (or 2 for a stronger taste)
- 4 eggs
- 70 g almond flour
- 80 g flour
Butter a 20 cm round pan and dust with cocoa and let it rest in the refrigerator.
Melt the chocolate with the butter. Add sifted icing sugar( you can increase the amount for a sweeter cake-I like it like this), then the egg yolks, coffee.
Sift in the flour and almond flour.
Whisk the egg whites with a pinch of salt, and gently fold in the chocolate mixture, with a spatula.
Pour the batter in the prepared pan, level the surface and bake for 30 minutes at 200°C, until a toothpick came out clean.
