Are you tired to beg the kids eating zucchini? I found a way to reverse roles. They ask for more.
Getting your kids to not only eat their vegetables, but also beg for more, became possible with these kid-friendly zucchini cakes.
- 1 zucchini, grated
- 2-3 eggs
- 2 Tbs parmesan grated
- 2 Tbs semolina
- 4Tbs breadcrumbs
- salt, pepper
Mix all the ingredients.
Spoon the cakes in boiling oil and fry on medium heat.
Turn them after 2-3 minutes.
You can also bake them in the oven, on parchment paper.
You can serve them with garlic sauce, or a side near a meat-based main dish.
